Don't we all  love the summer! - but the Winter at the Beach in Ireland  has so many charms.....       let us embrace it all by.......

 ..get  away with making your own linen couch covers:
 
Make a couch cover with out a sewing  machine:

Use a flat sheet or material that is large enough to drape over the sofa from front to back and side to side. Buy about two dozen upholstery tacks. Some of the tacks will show so choose tacks that come in the right colour or paint the tack head yourself.

Remove the seat cushions from the sofa. Drape the large flat sheet over the couch so that it's completely covered. Tuck the sheet into the seat area and any crevices, making sure there's enough sheet left to cover the front and sides.

Attach the sheet to the back of the seat area with tacks.

Adjust the sheet over the arm areas, tucking it and folding it as needed to get a smooth fit. Hold the sheet in place with tacks along the undersides of the arms, and along the sides of the front of the arms. Adjust the sheet over the back of the sofa so that the sheet lies as flat and smooth as possible against the furniture. Cut a piece of sheet fabric from a sheet that's large enough to wrap all the way around the seat cushion. Lay the sheet fabric face down on the floor, and place the cushion upside down on top of it. Wrap the sheet fabric around the cushion like a package, and pin the edges together with safety pins do the same with the other cushion

Replace the seat cushions, pin side down, on the sofa. The seat cushions will help hold the slipcover in place.

here are my favourite's.........  


Waffles (by Kate Habershon)
 1 Cup all-purpose flour
 1 1/2 teaspoons baking powder
2 1/2 TBL Sugar
1/2 teaspoons of salt
2 eggs, separated
3/4 cup of milk
Mix dry ingredients together in a bowl.  
Separate the egg whites from the egg yolks. Mix egg yolks and milk together in a separate bowl. Add the milk mixture to your dry ingredients, be sure and not over mix! Beat egg whites until soft peaks form. Fold egg whites into batter. Make sure you don't over mix the egg whites into your batter. Over mixing your pancake batter will cause your pancakes to be chewy : ( I like to butter the grill before cooking my first batch of pancakes.
 
 
Avoca -Irish White Soda Bread
450g / 1lb plain flour
1 level tsp soda
1 tsp fine (caster) sugar
1/2 tsp salt
400ml / 14oz buttermilk

Mix all the dry ingredients in a bowl. Gradually add the buttermilk to make a moist, sticky, dough. Place in a greased loaf tin and bake at 230 C / 450 F / Gas Mark 8 for 30 mins. When done , the loaf will sound hollow when you knock on the bottom. Cool on a wire rack and enjoy with butter and jam or poached eggs.
 
 
 
 
 .......Irish coffee.......
1 1/2 oz Irish whiskey 
1 tsp brown sugar 
6 oz hot coffee
heavy cream
Combine whiskey, sugar and coffee in a mug and stir to dissolve. Float cold cream gently on top. Do not mix.
 
.....serve coffee with chocolate teaspoon.....melt dark chocolate and dip the ends of the spoons into the chocolate
 
 
 
 
Avoca-Brown Soda Bread

Ingredients:
  • 6 oz. White Flour 
  • 11 oz.  Whole Wheat Flour
  • 3 Tbsp bran                                                 
  • 2 Tbsp wheat germ 
  • 2 heaping tsp. baking powder 
  • 1 tsp salt 
  • 1 1/2 tsp molassess 
  • 1 - 1 1/2 pints whole milk
How to make:
 Preheat your oven to 400 degrees.
Generously oil an 8" x 5" loaf pan. Dust it with dried breadcrumbs.
Mix the dry ingredients in a large bowl. Add the molasses and stir in enough milk to give the batter a "moist but not sloppy" texture.
Turn the batter into the prepared pan and shake to level.
Bake somewhere between 6 to 20 minutes, keeping an eye on the bread to see when it has risen.
When it has risen reduce the heat to 325 and continue to bake for another hour.
run a knife around the inner sides of the pan to loosen the bread and ease it out.
If, when tapped on the bottom the bread sounds hollow, it is done. Otherwise place it back in the oven just on the rack without its pan, and bake a bit more, until it passes the "hollow test", about 10 to 15 minutes.
Slice to serve and accompany with softened butter.

Goat Milk Soap Recipe
 
(Martha Steward and Dr Brent Ridge recipe)
 
Tools and Materials
Protective mask and gloves
Stirring spoons or sticks
Candy thermometer
Electric hand blender
Spatula
Large bowl
Pitcher
Soap molds
Cookie racks
12 ounces partially frozen goats' milk
3 ounces lye
4 1/4 ounces extra-virgin olive oil
5 ounces coconut oil
12 ounces soy or vegetable shortening

1. Wearing a protective mask and gloves, place milk into large bowl and slowly add lye. Stir until the mixture is smooth and without lumps. The lye will interact with the fat molecules in the milk and should bring the mixture to between 95 and 100 degrees Fahrenheit.

2. Melt the olive oil, coconut oil, and shortening together in one pot and bring to 115 degrees.

3. Add the oil mixture to the milk and lye and use a hand blender to combine until the mixture demonstrates "tracing" (drips from the blender leave a noticeable path in the mixture). This will take 2 to 5 minutes.

4. Using a spatula, fold the mixture to remove bubbles. Transfer to a pitcher and pour the mixture into soap molds.

5. After 24 hours, turn the soaps out of the molds onto cookie racks. Allow to cure for 2 weeks.

Scent your own pine cones:
Scent your own cones with essential oils- cinnamon, apple, orange, nutmeg  or peppermint.
If you collected your own pine cones clean them by washing and dry them out in the oven at 200F for 1 hour. Place water in a spray bottle and add several drops of essential oil. Spray the cones and seal in a plastic bag for 24 hours. Remove and let air dry.
 
 
  
 
 
 
  
 
 
 
 
 
 
Sea Weed Powder: 
  Make seaweed powder by taking a coffee grinder and putting the seaweed in it and grinding it for about 30 seconds. Grind it into a powder for the following recipes.
 
 Seaweed Face Mask Combine 1 tbsp of seaweed powder to 2 tbsp of water and 1 tsp of aloe vera gel to form a paste. Apply to the skin and leave on for about 10 minutes before washing off with warm water.

Seaweed is commonly used in body wraps due to it's ability to extract toxins from the skin. It is very helpful in combating cellulite.
 
Seaweed Body Wrap Combine ½ cup seaweed powder, 3 tbsp jojoba oil and 2 drops of lavender oil in a bowl. Slowly add water while stirring the mixture until it forms into a paste. Apply paste to various parts of the body and cover with plastic wrap. Leave on for 20 minutes and rinse thoroughly with warm water.
